The hill town of Lucban has built one of the Philippines' most distinctive regional food identities around two things: longganisa (the fat, garlicky pork sausage unique to the town) and pancit habhab (rice-flour noodles eaten directly from banana leaf without utensils). A dozen eateries along the main street serve both; the morning market is one of the most fragrant in Southern Luzon.
