La Paz Public Market

The spiritual home of batchoy, Iloilo's iconic noodle soup of pork innards, crushed chicharrón, and rich broth — invented right here at the La Paz stalls in the 1930s. The bustling wet market is the soul of Ilonggo food culture, where vendors sell fresh seafood, native delicacies, and the freshest local produce at dawn. No Iloilo trip is complete without a steaming bowl at one of the century-old eateries inside.
