Kauswagan Seafood Strip

Dipolog City, Zamboanga del Norte, Zamboanga Peninsula

A line of open-air grilling stations along Dipolog Bay where local fishermen sell the morning's catch direct to restaurants that cook it over coconut-husk coals before noon. Tuna, tanigue, blue crab, and the local specialty — fresh oysters from the Dipolog estuary — are sold by weight and served with grilled rice and native vinegar. The smell of smoke and salt carries across the waterfront; tables are rough and plastic; the fish could not be fresher.
