GenSan Tuna Port Complex

General Santos City handles roughly 60% of the Philippines' tuna catch — a statistic that becomes viscerally real at the Fish Port Complex before dawn, when vessels unload yellowfin, bigeye, and skipjack tuna weighed and auctioned in minutes. What remains after export ends up at port-adjacent restaurants as some of the freshest raw tuna in Southeast Asia. The fatty tuna sashimi served at 7 a.m. at the stalls beside the auction floor is the reason to make the early start.
