Along GenSan's lakeside commercial strip, the night market reflects the city's frontier fishing energy: kinilaw na tuna as the default opener — fresh, firm, dressed with local coconut vinegar and sili — alongside grilled liempo, lechon kawali, and fresh tuna belly to finish. The market is a working-class institution in a city that built itself from fishing and has never really slowed down; the stalls are packed by 7 p.m. and the energy stays high past midnight.
